First, pour the can of pickled beet into a large bowl. Add ACV, sugar, peppercorns, and salt. This will become your base brine. Now carefully place your peeled eggs in this brine. Cover and refrigerate for about 48 to 72 hours.

You could also leave it for 16 hours, if in a hurry. After refrigeration, remove the eggs from the brine, cut it in half and scoop out the yolk(2). Now add olive oil, white vinegar, mustard, curry powder, and mayonnaise to the yolk.

Mix and mash the entire combination thoroughly and bring it to a nice and smooth creamy content. Adjust the taste with salt and pepper as per requirement. Now scoop this egg yolk cream and put it back into the egg white cups. Finally garnish with pepper, salt, and chopped rosemary.
