Chicken Braised With Red Wine Vinegar

The ingredients are

  • 1/4 cup of all-purpose flour
  • Kosher salt and ground black pepper
  • 2 lb. boneless, chicken thighs, cut into four even pieces
  • 3 tbs. of olive oil
  • One small onion halved and thinly sliced
  • Two large cloves garlic, minced
  • One 14-oz can diced tomatoes
  • One dried bay leaf
  • 1/3 cup good-quality red wine vinegar
  • 1/2 cup of lower-salt chicken broth
  • 1/4 cup of chopped fresh parsley

To Prepare

  • Put the flour, 1 tsp. Salt, and 1/2 tsp. Pepper in a plastic zip-top bag.
  •  Close it and shake it.
  •  Add the chicken to the bag and zip it.
  • Shake it vigorously to coat with flour.
  • Heat 2 Tbs. of oil in a 12-inch skillet over medium heat until shimmering hot.
  •  Add half of the chicken in a layer and cook until golden, 2 to 3 minutes per side.
  • Transfer the chicken to a large bowl. Add the remaining 1 tbs. oil to the pan and repeat.
  • Add the onion to the pan and stir until slightly softened.
  • Add the garlic and cook for 30 seconds.
  • Add the tomatoes and bay leaf and increase the heat, and cook until the tomatoes are cooked thoroughly.
  • Add the vinegar and boil until almost evaporated about 30 seconds.
  • Add the chicken and any collected juice back into the pan, along with the chicken broth, 1/2 tsp. Salt and 1/2 tsp of pepper stir well to combine.
  • Bring to a boil, then decrease the heat to maintain a simmer.
  • Partially cover the pan and occasionally stir it. Cook until the chicken is cooked through, about 8 to 10 minutes.
  • Add the parsley, cover, and cook for 1 more minute.
  • Remove the bay leaf and serve it with simple green beans and crispy bread.
